Chicken Enchiladas

Boil 2-3 chicken breasts, cut up in cubes

Mix together:
onion to taste and 2 tbsp. butter
Melt butter with onions in pan and let simmer.

Add 2 tbsp. flour and stir

Add 1 c. chicken water and 2 bullion cubes
1 can cream of chicken soup
1 large tbsp. sour cream
3/4 c. grated cheese

Then add boiled chicken to your sauce mixture (but save 1 cup of sauce alone to pour over enchiladas). Put chicken and sauce mixture into taco shells and roll up in 9x13 pan. Pour 1 c. sauce over enchiladas. Bake at 375 degrees for 20 - 30 mins.
